Depending on the size of the tank I would say a school of rummynose tetras or cherry barbs if you want a different look. Another option for a smaller tank could be celestial pearl danios. But they normally prefer some coverage so might not be crazy active. Shrimp also look amazing in tanks...

Yeah hopefully shouldn't take too long to stick there and I agree that the dunes look good if you can keep them going, they add a surprising amount of depth to the tank in my opinion. Are you planning shrimp for this tank? Should be a fantastic shrimp tank if you are.

Fantastic. Yeah the rocks will look great once the moss starts to take off. It might be a bit fiddly to try and keep the shape but will be well worth it!

I agree on the supplements you mentioned not being all that useful but I do love my Bee Shrimp GH+ and seem to have noticed a difference in molting after using Beta-Glucans immune booster so it is probably worth checking that out also in my opinion.
