When dosing EI it is usual to change 50% of your water on a water change day. I'm not sure how the all-in-one type of ferts work tho... So it may not need to be as much. That being said I have always changed at least 50% when I have done any of my water changes.
As Alastair said earliest Seachem's Excel is only a liquid form of carbon and doesn't contain any ferts like N, P or K which you will find in things like TPN or some other plant food. So I would carry on with whichever liquid carbon you are using but also pick up an all-in-one fertiliser, like...

11 hours of light is a lot by any standard...Using 2xT5 for that length of time you should defo be pumping Co2 in pressurised and EI dosing.

That looks like Tom B's TPN+ all in one mix? It's not quite EI in my knowledge. If you are unsure about your dosing amounts the FuildSensor Online EI Calculator. It's based on The CEGs EI recipe. I'm currently using it mixed into Macro and Micro (Trace) in 500ml bottles.

You've not listed the types of plants that you are growing, some plants are know for slow growth. The other thing, and is that light drives plant growth, so the higher the light the faster they will grow. Just as long as all other demands are met in the right measure (Co2/Ferts). Now...
Thanks guys. I wouldn't imagine I would cause any salt burn with a dilute end of the week EI reused tank water. I'm not sure of the flavour of the tree, but do remember is stay to feed only in Spring-Summer.

Jame's Planted Tank's All-in-One (DIY TPN+) calls for 0.5g E300 Ascorbic Acid and 0.2g E202 Potassium Sorbate I believe that the acid is to prevent mold/fugus growth and and the P-Sorbate is to prevent unwanted reactions with the trace. If that is the case could you not use this acid in your mix?

Yeah, that was my thinking as well but I would like someone with a little more experience and chemistry knowledge to say "Yes, you are fine using tap water in your EI mix".
The way I understand the reasoning behind not using tap water and using deionised or RO water is that you can control exactly the amount of each chem you are adding into your tank. But surely a couple of extra ppm of nitrogen in an EI mix isn't gonna hurt?

I think the major problem I was having was that the recipe for the DIY TPN+ that I was using previously seemed to have less of the above ingrediants in the same sized bottles and was dosing less ml's.
I guess... I was majorly under dosing...

I was wondering if anyone could help me confirm the number from FluidSensor Online's EI Calculator? If I put my tank size (240litres) into it I get the following.
Macro
3.7g Potassium Nitrate (KNO3)
1.4g Monopotassium Phosphate (KH2PO4)
8.9g Magnesium Sulphate (MgSO4)...

I have a 240litre tank and using the calculator provide on FSOnline, it tells me that when setting up a 500ml mix of Macro and trace that I have to dose 120ml of each on consecutive days (Macro/Trace/Macro/Trace/Macro/Rest/Rest/WaterChange). That seemed excessively high...
I would imagine that if you are using dry ferts you're not gonna have any additional copper in your dosing.
U're able to get dry chems from AquaEssentials and FluidSensorOnline.
