So, everywhere I read says stainless steel mesh is the only one safe for tanks, but I have some aluminium stuff left over from an old art project and I was wondering if it would be safe enough to make a lid for my tank with?

I'm not really planning to submerge it, but with condensation from surface disturbance being a thing I know that any oxide could potentially drip into the tank?

Yeah, it will drip. I'd use stainless steel. Alunimium with acidic water is not a good idea.

You can put an Epoxy coating on the inside. Epoxy is after curing chemically inert and extremely durable. :)
