I've just recently bought a fluval aquasky 2.0 12w for my nano shrimp tank. It's got Monte Carlo, UG and hairgrass. Will this light be enough to have everything grow.

Try it and see, I think UG you may find toughest, but each tank has different variables so if you already have the light, if the spread is decent and the tank isn't hugely deep, all things being equal you'll likely be able to elicit decent growth.
