I have a Juwel 60 in which I have Crystal Red and Amano Shrimp. I plan to strip it down, remove the internal filter and replant. I will need filtration on the temporary home for a week or two, so planning to run a Fluval 305 (with sponge on the inlet) on the Juwel for a couple of weeks to mature it and run this on the temporary tank.
Does this sound an ok plan?

Sounds good to me.
I'd squeeze as much muck out of the old filter into the new filter when you first put it in.
If you can get some muck out of the gravel add that in too.

When I last did a total strip down I got up early and did it all in one day.
Was a long day and quite tiring, but saved having to run in a second filter.
