I think topping up as far as you can before you start is a good idea. If you waterchange out the bag water and replace with mainly tank water I don't see what's wrong with putting the bag in the water at the end and just let the shrimp escape in their own time. No need for netting that way...

same as bogwood, the powdered one called 'Baby Pro' from freshwatershrimp seems to work well, but I haven't tried the more expensive ones so can't compare
Hiya, I don't think you should worry about lowering gH 5, as any much lower and shrimp might not moult easily. Same with pH, since I think you have adaptable types of shrimp, and its more important to keep it steady than low.
