How to do a re-scape?

I am planning a big ol' re-scape of my 20 gal long,

Fauna: 5 Cardinal Tetras and 2 GBR's and 1 Female Dwarf Gourami.
Flora: 3x Amazon Sword, 10 stems of Java Fern, 2 rhizomes of Anubias Nana and 4x Unknown plant
Hard-scape: Loads of rocks, a large 'tree trunk' shaped piece of bogwood.

Iv'e got a guy called Plantbrain (apologies, I don't know real name) sending me some Driftwood and i'll be buying and selling off some plants ect.

Should I move the fish out of the tank while I re-scape?
If so, where to?
Shall I plant my tank when it's sorta full (when my hands are in) or take all the water out?
Would I have to store existing water, so don't have to cycle again and possibly kill fish?
Can I set up a Ryoboku style without expensive CO2?
Would I have to sell or give away my swords for this? I think I would...

Get a large bucket or similar, put filter and old water in, add fish. Your fish are secure while you rescape and your filter stays cycled.

I prefer planting with just an inch or so of water, but that's just me.
