My tap water is very hard (over 20 degrees) . I'd like to soften it if possible. I've heard Almond leaves and rain water can be used to mix it a bit/ top up. Has anyone ever used these to actively soften the water more naturally?

Rain water works good. Except you have to make sure it is clean, so start to collect only after it has rained a while, like 30 mins or so, this way less chance of pollutants (either from the air or lying on a roof) in it. Reverse Osmosis is easier, but more expensive.
For a planted tank and almost all fishes you dont need soft water though.
