all of the substrate is being pushed back by the flow and my corys seem to like uprooting the rhizome even further...

any advice on what I can do to stop this?

Or would some alternative carpet plant work better?

It looks like a new carpet to me and (if so) I can't see too much wrong at the moment. Corys will uproot some stuff but I just replant it deeper (as you have done with the clump in the background) and wait for the next lot to appear on the surface, as it will with those frisky Cories!. Eventually the grass will start spreading and less (or nothing) appears at the surface. Then you have to pull it up yourself and send it to others who need it more than you. The worst thing is that you end up pulling out clumps and throwing it on the compost!!
